In the Duarte Province, in the north of the Dominican Republic, there is the Zorzal Reserve. In this land, also called as a bird sanctuary, the conservation and recovery of the ecosystem and its first commitment. This environmental wealth nourishes the quality of the cocoa beans.
Zorzal cocoa is also grown by 25 farmers neighboring this reserve, who share the same vision of quality and environmental conservation. The taste of this chocolate starts with the freshness of red fruits, then fills your mouth with its velvety nutty texture. At the end, it leaves notes of wood and dry flowers. 82%, is the percentage we set for this cocoa, to enhance its nutty character with subtle nuances, which we fell in love with.
This very dark chocolate could be a good pairing for Vintage Port wine.
