Peruvian chocolate 70% with dried Mirabelle plums
The mirabelle is a speciality of the French region of Lorraine and the only crop of the year is in August. So we found a producer that dries them after the crop so we can have it for the inclusion bars the rest of the year. Its sweet and floral aromas made us think of a very good match for the Huallaga cacao (that has also sweet fruit notes).
Cacao Origin: Peru - (Cooperativa Alto Huallaga)
Ingredients: Cocoa nibs, unrefined cane sugar, dried mirabelle plums, cocoa butter.
